Roasted Peaches

Preheat and prepare peaches
Preheat oven to 425°F (220°C). Line a rimmed baking sheet with parchment paper or lightly oil it. Halve the peaches and remove the pits. If large, quarter the halves so pieces are roughly uniform.

Toss and roast
In a bowl, gently toss peach halves with 1 1/2 tablespoons olive oil, 1 teaspoon honey, 1 teaspoon salt, and 1/2 teaspoon black pepper until lightly coated. Arrange cut-side down on the prepared baking sheet in a single layer. Roast 12–15 minutes until peaches are softened and edges caramelize. Remove from oven and let cool slightly.
Croutons

Prepare croutons
Increase oven temperature to 450°F (230°C) after removing peaches (or keep at 425°F and add a few extra minutes). Toss bread cubes with 2 tablespoons olive oil, minced garlic, 1/2 teaspoon salt, and 1/2 teaspoon dried oregano until evenly coated. Spread in a single layer on a baking sheet.

Toast
Bake 8–12 minutes, stirring once halfway, until golden and crisp. Watch closely so they don't burn. Remove and let cool.
Lemon Vinaigrette

Toss greens
Place 5 cups baby kale mix into a large bowl. Add about 2 tablespoons of the lemon vinaigrette and gently toss to coat the leaves evenly. Add more dressing sparingly to taste—salad should be lightly dressed.

Arrange salad
Divide dressed greens between 2–3 plates (serves 3). Arrange roasted peach halves over the greens. Scatter 3/4 cup of croutons across the salads.

Add burrata and finish
Tear or place burrata pieces (total 8 oz) gently onto each salad so each portion gets roughly 2–3 oz. Drizzle each plate with balsamic glaze (about 2 tablespoons total across all plates) in a thin stream. Sprinkle toasted nuts if using (2 tablespoons). Finish with a small grind of black pepper and an optional pinch of flaky sea salt on the burrata.
