Method

Prepare
Preheat oven to 350°F (175°C). Line a 12-cup muffin tin with paper liners or lightly grease the cups.
Dry ingredients
In a medium bowl, whisk together 1.5 cups all-purpose flour, 1 cup granulated sugar, 1.5 tsp baking powder, and 1/2 tsp fine salt until evenly combined.
Cream butter & sugar
In a large bowl or stand mixer fitted with the paddle attachment, beat 6 tablespoons room-temperature unsalted butter on medium speed for about 30 seconds, then add the dry mixture and continue beating 30–45 seconds until the mixture is pale and slightly fluffy. (Alternatively, cream butter and sugar separately if you prefer: beat butter 30 seconds, add sugar, beat 2–3 minutes.)
Add eggs & vanilla
Add the 2 large eggs one at a time, beating briefly after each until incorporated. Scrape the bowl as needed. Add 1 tsp vanilla extract and mix until combined.
Finish batter
With the mixer on low, alternately add the remaining dry ingredients and 1/2 cup milk in three additions, beginning and ending with the dry ingredients (dry-wet-dry). Mix just until combined and no streaks of flour remain — avoid overmixing.
Customize batter (optional)
If making chocolate cupcakes, whisk 1/4 cup unsweetened cocoa powder with 2–3 tbsp of the dry flour before combining, or fold cocoa into finished batter. Gently fold in up to 1/2 cup mini chocolate chips or 3/4 cup berries if using. For lemon cupcakes add 1 tbsp lemon zest; for spiced cupcakes add 1/2 tsp ground cinnamon. Do not overmix after adding mix-ins.
Portion & bake
Divide batter evenly among the 12 liners, filling each about 2/3 full (roughly 3 tablespoons batter per cup). Bake at 350°F (175°C) for 16–20 minutes, rotating the pan halfway through if your oven bakes unevenly. Cupcakes are done when a toothpick inserted into the center comes out clean or with a few moist crumbs and the tops spring back when lightly pressed.
Cool
Allow cupcakes to cool in the pan for 5 minutes, then transfer to a wire rack to cool completely (about 30–45 minutes) before frosting to prevent the buttercream from melting.
Vanilla Buttercream Frosting
Beat butter
In a large bowl or stand mixer, beat 8 tablespoons room-temperature unsalted butter on medium speed until smooth and creamy, about 1 minute.
Adjust texture
Increase mixer speed to medium-high and beat 1–2 minutes until light and fluffy. Add 1–2 tablespoons heavy cream or milk to reach desired spreadable consistency; add additional sugar if too thin or an extra tablespoon of cream if too stiff.
Color or flavor (optional)
If desired, stir in a few drops of food coloring or 1/2 tsp lemon juice or cocoa for flavor variations.
Pipe or spread
Fit a piping bag with your preferred tip or use a knife. Pipe or spread frosting onto completely cooled cupcakes. For a generous swirl, use about 2 tablespoons frosting per cupcake.
Toppings / Finish
Immediately after frosting, decorate cupcakes with chosen toppings: sprinkle 1–2 teaspoons sprinkles, 1 tablespoon chopped nuts, a few fresh fruit slices, or drizzle 1 teaspoon chocolate sauce over each cupcake. If using meltable toppings (chocolate sauce), allow 5 minutes for the topping to set before serving.
Storage: Store frosted cupcakes in an airtight container at room temperature for up to 2 days, or refrigerate up to 5 days. Bring refrigerated cupcakes to room temperature before serving (about 30 minutes). Unfrosted cupcakes can be frozen up to 3 months; thaw overnight in the refrigerator and bring to room temperature before frosting.
