Method

Popcorn

    Prepare a large, heavy-bottomed pot with a tight-fitting lid. Add the oil and 3 popcorn kernels; place over medium-high heat.

    When the test kernels pop, add the remaining popcorn kernels in an even layer, cover, and reduce heat to medium. Gently shake the pot every 15–20 seconds to prevent burning.

    Once popping slows to 2–3 seconds between pops (about 2–3 minutes), remove the pot from heat. Transfer popped corn to a large, dry bowl. Immediately sprinkle the fine sea salt over the popcorn and toss to evenly season.

Truffle Butter

    In a small saucepan over low heat (or in a microwave-safe bowl), melt the unsalted butter gently until just liquefied. Do not let it brown.

    Remove from heat and stir in the white truffle oil, the optional truffle zest or finely grated preserved truffle (if using), and the freshly ground black pepper. Taste and adjust the truffle oil amount if you prefer a stronger aroma, but use caution—truffle oil is potent.

    Let the truffle butter sit 1–2 minutes so the flavors meld, then drizzle evenly over the warm popcorn while tossing to coat thoroughly.

Finishing & Garnish

    While tossing the popcorn with the truffle butter, sprinkle about two-thirds (approx. 2/3 cup) of the freshly grated Parmigiano-Reggiano and continue to toss gently so the cheese melts slightly and clings to the popcorn.

    Add the chopped parsley and chives, toss again to distribute the herbs evenly.

    Taste and season with a little extra fine sea salt or freshly ground black pepper if needed. Reserve the remaining grated Parmesan for finishing at service.

    If using microgreens, line a serving bowl with a small handful to create a visual bed and transfer the popcorn on top for presentation.

Nitro Mist (Presentation)

    Safety note

    Liquid nitrogen is hazardous. Only trained personnel should handle it with proper protective equipment (cryogenic gloves, face shield) and a well-ventilated area. Do not serve nitrogen directly on food that will be eaten while still extremely cold.

    Just before serving, place the bowl of popcorn on a stable, heat-resistant surface in a well-ventilated area. Wearing cryogenic gloves and eye protection, carefully pour a small stream of liquid nitrogen into a separate shallow metal bowl or tray to create a dense fog.

    Position the popcorn bowl nearby and briefly pass the nitrogen tray close under and around the popcorn to create a dramatic smoky fog effect for presentation. Do not pour nitrogen onto the popcorn. Allow the fog to dissipate for 10–20 seconds before guests handle the bowl.

    Alternatively, for a no-nitrogen option, use dry ice in a separate container (never in direct contact with food) with warm water to achieve a smoky effect.

Service

    Just before passing to guests, grate the reserved Parmigiano-Reggiano over the top for a fresh finish and scatter any remaining herbs and microgreens.

    Serve immediately so the popcorn remains crisp and the truffle aroma is at its peak.
