Cooking Instructions

  1. 1

    Prepare the Steak

Marinate the steak in Coca-Cola for at least 2 hours, preferably overnight. Remove from marinade and season with salt and black pepper.

  2. 2

    Make the Bombshell

In a bowl, mix the all-purpose flour and masa harina with water until a dough forms. Divide into small balls and flatten into discs. In the center, add queso fresco and crumbled bacon, then fold and seal the edges. Cook on a hot skillet until golden brown on both sides.

  3. 3

    Cook the Steak

Heat a grill or skillet over high heat and cook the marinated steak for about 4-5 minutes on each side or until desired doneness. Let it rest before slicing.

  4. 4

    Sauté the Vegetables

In a skillet, heat some oil over medium heat. Add sliced onions and poblano peppers, and sauté until caramelized and tender.

  5. 5

    Prepare Cilantro Aioli

In a bowl, mix mayonnaise, minced garlic, lime juice, and chopped cilantro. Season with salt and pepper.

  6. 6

    Assemble the Dish

On a plate, layer the bombshell, sliced steak, sautéed portobellos, caramelized onions and poblanos, and sprinkle with Chihuahua cheese. Drizzle with cilantro aioli and serve.
