Cook the Chorizo
In a skillet over medium heat, cook the Impossible chorizo for about 5-7 minutes, stirring occasionally, until fully heated and slightly browned. Remove from heat.

Prepare the Taco Shells
Warm the flour tortillas in a separate pan or microwave until soft and pliable. Also, warm the hard taco shells as per package instructions.

Assemble the Tacos
In each soft flour tortilla, add a scoop of cooked chorizo, followed by a sprinkle of Monterey Jack cheese, a handful of lettuce, and a generous amount of pico de gallo.

Add the Hard Shell
Place the filled flour tortilla into a hard taco shell for added crunch.

Finish with Toppings
Top each taco with a dollop of sour cream and a drizzle of avocado ranch dressing before serving.
