Cooking Instructions
- 1
Prepare the Stoner Shell
In a large bowl, combine the all-purpose flour and cornmeal. Gradually add water until a dough forms. Knead for about 5 minutes until smooth. Divide the dough into small balls and roll them out into flat discs. Preheat a skillet and cook each disc for about 2-3 minutes per side until golden brown. Set aside.
- 2
Cook the Chorizo
In a skillet over medium heat, cook the chorizo until browned and cooked through. Remove from heat and set aside.
- 3
Spice Rub the Chicken
In a small bowl, mix paprika, cumin, garlic powder, salt, and black pepper. Rub this spice mix all over the chicken breasts. Heat a grill or skillet over medium-high heat and cook the chicken for about 6-7 minutes on each side or until fully cooked. Let rest before slicing.
- 4
Assemble the Dish
On each stoner shell, layer sliced chicken, chorizo, smoked cheddar, pico de gallo, corn salsa, chipotle honey BBQ sauce, and salsa roja. Garnish with fresh cilantro.
