Divide into 4 equal portions, roll each out into a thin circle, and cook on a hot skillet for 1-2 minutes on each side until lightly browned. Set aside.

    In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the ground sirloin, chili powder, cumin, and salt. Cook, stirring occasionally, until the meat is browned and cooked through, about 7-10 minutes.

    On each flour shell, layer the chili spiced ground sirloin, smoked cheddar cheese, shredded lettuce, pico de gallo, and drizzle with chipotle crema. Fold and serve immediately.
