    Sear the Short Ribs

    In a large Dutch oven, heat olive oil over medium-high heat. Season the short ribs with salt and pepper and sear them on all sides until browned. Remove the ribs and set aside.

    Sauté Vegetables

    In the same pot, add the chopped onion, garlic, carrots, and celery. Sauté until the vegetables are softened, about 5-7 minutes.

    Add Tomato Paste and Liquids

    Stir in the tomato paste and cook for 2 minutes. Then add the beef broth, tequila, and whiskey. Bring to a simmer.

    Braise the Ribs

    Return the short ribs to the pot, add bay leaves, and cover. Reduce heat to low and let it braise for about 3 hours, or until the meat is tender and falling off the bone.

    Prepare Tacos

    Once the short ribs are done, remove them from the pot and shred the meat. Warm the corn tortillas and fill each with the shredded beef. Top with fresh cilantro and a squeeze of lime.

    Serve the braised short rib tacos with lime wedges on the side and enjoy with a shot of tequila or whiskey!
