Preparing the Dough

    Mix the Dry Ingredients

    In a large bowl, combine the all-purpose flour, masa harina, and salt.

    Add Water

    Gradually add water to the dry mixture, kneading until a smooth dough forms. Let it rest for 30 minutes.

Preparing the Filling

    Combine Fillings

    In a bowl, mix together the crumbled bacon and shredded Chihuahua cheese.

Assembling the Bomba

    Form the Bombas

    Divide the dough into equal portions. Flatten each portion and place some of the filling in the center. Fold the dough over to seal and shape into a bomb.

    Cook the Bombas

    In a hot skillet, cook the thick cut bacon until crispy. Remove and set aside. In the same skillet, cook the bombas until golden brown on all sides.

Serving

    Plate and Garnish

    Serve the bombas topped with shredded lettuce, pico de gallo, cilantro-lime aioli, pickled jalapeños, and crispy bacon.
