Quesadilla Base

Preheat and prep
Heat a large skillet or nonstick pan over medium heat. If using a griddle, preheat to medium. Have all ingredients measured and ready so the quesadilla cooks quickly and the cheese melts evenly.

Assemble quesadilla
Lay one flour tortilla on a clean work surface. Sprinkle about half of the shredded cheese (≈3/4 cup) evenly over the tortilla, leaving a 1/2-inch border. If adding an optional add-in (choose one or combine small amounts), distribute 0.5–0.75 cups of the cooked meat or vegetables in an even layer on top of the cheese. Sprinkle remaining cheese over the filling (this helps the top and bottom stick together). Top with the second tortilla.

Cook first side
Add 1/2 tbs of butter or oil to the hot skillet and swirl to coat. Carefully transfer the assembled quesadilla to the skillet. Cook for 2.5–3 minutes, or until the bottom tortilla is golden brown and the cheese begins to melt. Reduce heat slightly if the tortilla browns too quickly before the cheese melts.

Rest and slice
Transfer the cooked quesadilla to a cutting board and let sit 1 minute (this helps the cheese set slightly). Slice into 4 wedges using a pizza cutter or sharp knife. Garnish with chopped cilantro and serve with lime wedges.
Optional Add-Ins (choose +$1.50)

Warm or finish proteins/vegetables
If your add-in is cold (leftover cooked chicken, beef, beans, or roasted vegetables), warm it in a small skillet over medium for 1–2 minutes with a pinch of salt and pepper to ensure it doesn't cool the quesadilla and that it blends with the cheese. For sautéed peppers and onions: heat 1 tsp oil in a skillet, add sliced peppers and onions, season with 1/4 tsp salt, and cook 4–6 minutes until softened and slightly caramelized. For black beans: heat gently with a pinch of cumin and salt for 1–2 minutes.

Seasoning suggestion
If using plain proteins, season lightly with 1/4 tsp chili powder and 1/4 tsp garlic powder per 3/4 cup protein while warming to add cohesive flavor.
Accompaniments / Sauce (optional)

Serve each quesadilla wedge with a spoonful of sour cream, salsa, and/or guacamole on the side. Offer lime wedges to squeeze over the finished quesadilla.
