Warm and butter tortillas
Heat a large cast-iron or nonstick skillet over medium heat. Add 1/2 tablespoon butter and warm 4 tortillas in the pan, about 20–30 seconds per side, until pliable and lightly toasted. Keep warm wrapped in a kitchen towel. Repeat with remaining butter and tortillas. Keep tortillas covered until assembly.

Prepare finishing garnishes: crumble the queso fresco, chop cilantro and cut lime into wedges so they are ready at service.

Crisp potatoes & vegetables
Heat a large skillet over medium-high heat. Add 2 tablespoons olive oil. When shimmering, add the drained diced potatoes in a single layer. Let them sit undisturbed 3–4 minutes to brown, then stir and cook another 3–4 minutes until golden and crisp. Add the diced onion and bell pepper; cook, stirring occasionally, about 4–5 minutes until softened and edges begin to caramelize. Add the minced garlic and chopped sage and cook 30–45 seconds until fragrant. Season with smoked paprika, cumin, 1/2 teaspoon of the kosher salt, and 1/4 teaspoon black pepper; stir to combine.

Make scrambled eggs farm-style
In a medium bowl whisk together 6 eggs, 1/4 cup milk, remaining 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper until just combined. Reduce skillet heat to medium-low and push the potato–veg mixture to one side of the pan. Add a small pat of butter or 1 teaspoon olive oil to the cleared space. Pour the egg mixture into the empty side and let it set undisturbed 10–15 seconds. Then gently scramble, folding cooked eggs toward the center, incorporating some potato–veg as you go. Continue until eggs are mostly set but still slightly soft, 1–2 minutes. Fold everything together and if using, sprinkle the grated cheddar over the mixture and let it melt into the filling for 30–45 seconds. Taste and adjust seasoning.

Keep filling warm in the skillet over the lowest heat setting while you finish tortillas and assemble tacos.
Assembly & serving

To assemble each taco, lay a warm corn tortilla on a plate. Spoon about 1/3 to 1/2 cup of the farmer filling down the center of the tortilla (adjust to preference).

Top each filled tortilla with a sprinkle of crumbled queso fresco (about 1 tablespoon per taco), chopped cilantro, and a few slices of pickled jalapeño if using. Squeeze lime over the top and add hot sauce to taste.

Serve immediately while hot. Leftover filling keeps in an airtight container in the refrigerator for up to 3 days; reheat gently in a skillet before assembling.
