Mushroom filling

    Prepare mushrooms

    Clean mushrooms by wiping with a damp towel or quickly rinsing and patting dry. Slice mushrooms about 1/4 inch thick.

    Heat a large skillet over medium-high heat. Add 1 tbsp olive oil and the butter. When butter foams, add sliced mushrooms in a single layer (work in batches if needed) and let them sear undisturbed 2–3 minutes to develop color.

    Stir mushrooms and add remaining 1 tbsp olive oil if pan is dry. Add the chopped onion and cook 3–4 minutes until translucent. Add minced garlic and cook 30 seconds until fragrant.

    Stir in chipotle, cumin, smoked paprika and cook 30 seconds. Add soy sauce and 2 tbsp broth, scraping browned bits from the pan. Continue cooking until liquid evaporates and mushrooms are tender, about 3–4 minutes.

    Remove from heat and stir in lime juice, salt, pepper and 2 tbsp chopped cilantro. Taste and adjust seasoning. Keep warm while you prepare slaw and sauce.

Quick slaw

    In a bowl combine thinly sliced cabbage and grated carrot.

    In a small bowl whisk together 1 tbsp lime juice, mayonnaise, apple cider vinegar, honey, 1/4 tsp salt and 1/8 tsp black pepper until smooth.

    Toss dressing with cabbage and carrot until evenly coated. Let sit at room temperature for 10 minutes to soften slightly and meld flavors.

Creamy cilantro sauce

    In a blender or by using an immersion blender in a jar, combine Greek yogurt, cilantro leaves, 1 tbsp lime juice, 1/2 clove garlic, 1 tsp olive oil, 1 tbsp water and 1/4 tsp salt. Blend until smooth. If too thick, add up to 1 tbsp more water to reach drizzling consistency. Taste and adjust salt or lime.

Tacos & assembly

    Warm tortillas: heat a dry skillet over medium-high and warm tortillas 20–30 seconds per side until pliable and slightly charred. Wrap in a clean towel to keep warm.

    Assemble tacos: place about 2–3 tbsp mushroom filling onto each tortilla. Top with a small handful (about 2 tbsp) of quick slaw, a few slices of avocado, a spoonful (about 1 tbsp) of creamy cilantro sauce, pickled red onion and a sprinkle of cilantro leaves.

    Serve with lime wedges and additional hot sauce if desired.
