    Prepare

    Wash hands and rinse cilantro, jalapeño and tomato if using. Finely dice the red onion and tomato (if using). Chop cilantro and jalapeño; remove seeds from the jalapeño if you want milder heat.

    Halve and scoop avocado

    Cut the avocado in half lengthwise, twist halves to separate, and remove the pit. Scoop the avocado flesh into a small bowl.

    Mash and mix

    Use a fork to mash the avocado to a slightly chunky texture (not completely smooth). Immediately stir in the lime juice to brighten flavor and slow browning.

    Fold in aromatics

    Add the finely diced red onion, chopped cilantro, diced jalapeño, and diced tomato (if using). Mix gently to combine so the guacamole remains slightly chunky.

    Season

    Season with a pinch of sea salt and freshly ground black pepper. Taste and adjust: add more salt, a few drops more lime juice, or more jalapeño if desired.

    Portion

    Spoon approximately 3 ounces (about 85 grams or roughly 6 tablespoons) of guacamole into a serving container. If not serving immediately, press a piece of plastic wrap directly onto the surface of the guacamole to minimize browning and refrigerate.
