Hibiscus Agua Fresca Base

Optional Finishing & Garnish

Method

Hibiscus Agua Fresca Base

  1. 1

    Rinse and steep hibiscus

Quickly inspect the dried hibiscus and remove any stems or debris. Place 1 cup dried hibiscus flowers in a heatproof bowl or small pot. Add 6 cups boiling (or very hot) water, stir once, and cover. Let steep for 15 to 20 minutes until deep ruby-red and aromatic.

  2. 2

    Strain

Strain the hibiscus liquid through a fine-mesh sieve or cheesecloth into a pitcher, pressing gently on the solids to extract flavor. Discard (or reserve) the spent flowers for another use.

  3. 3

    Sweeten while warm

While the hibiscus infusion is still warm, stir in 1 cup granulated sugar until fully dissolved. Taste and adjust sweetness; if you prefer less sugar, start with 3/4 cup and add more to taste.

  4. 4

    Add lime and dilute

Stir in 3 tablespoons fresh lime juice. Add 4 cups cold water to the sweetened hibiscus concentrate and stir to combine. Taste and adjust: if too strong, add more cold water; if too tart, add a bit more sugar or 1–2 teaspoons agave/honey.

  5. 5

    Chill

Refrigerate the agua fresca for at least 30 minutes (longer for best flavor), or serve immediately over ice if desired. The drink will keep refrigerated in a sealed container for up to 5 days; stir before serving as sediments may settle.

Optional Finishing & Garnish

  1. 6

Serve over ice: Fill glasses with ice (about 3/4 cup per serving). Pour hibiscus agua fresca over ice. Add a lime slice and 1–2 mint leaves to each glass for aroma and presentation. If you prefer slightly sweeter or silkier mouthfeel, stir 1–2 teaspoons agave syrup or honey into each glass or into the pitcher before serving.
