Crema (base)

Method

Crema (base)

  1. 1

    Combine base

In a medium mixing bowl, whisk together the Mexican crema (or sour cream), whole milk, mayonnaise, honey, and fresh lime juice until smooth and slightly fluid. The milk adjusts texture — add a splash more if you prefer a thinner sauce.

  2. 2

    Taste for balance

Taste the mixture and adjust sweetness or acidity if needed: add an extra 1/2 teaspoon honey for sweetness or another 1/2 teaspoon lime juice for brightness.

Flavor & seasoning

  1. 3

    Prepare aromatics

Finely chop the cilantro and slice the chives. Mince the garlic and, if using, halve, seed, and finely mince the jalapeño. Place these prepared aromatics together.

  2. 4

    Incorporate flavors

Stir the chopped cilantro, chives, minced garlic, and jalapeño into the crema base. Add smoked paprika, ground cumin, kosher salt, and black pepper. Mix thoroughly so the spices distribute evenly.

  3. 5

Let the crema rest for at least 20–30 minutes in the refrigerator to allow the flavors to meld. For best results, refrigerate 2 hours or up to 24 hours; the jalapeño and cilantro will infuse the crema and the texture will thicken slightly.

Finishing & garnish

  1. 6

    Adjust final seasoning

After chilling, taste the crema again and adjust salt, pepper, or lime juice as needed. If too thick, whisk in up to 1 tablespoon additional milk, 1 tsp at a time, until desired consistency is reached.

  2. 7

    Plate and garnish

Transfer the Barracuda Crema to a serving bowl or squeeze bottle. Drizzle with a teaspoon of extra virgin olive oil, sprinkle lime zest, scatter additional chopped cilantro, and finish with a light pinch of flaky sea salt. Serve chilled or at cool room temperature.

  3. 8

Uses: This versatile crema pairs with grilled fish (especially barracuda or other firm white fish), tacos, roasted vegetables, as a dipping sauce for chips, or as a finishing drizzle for bowls and salads.
