Prepare the Beef
In a slow cooker, combine the beef chuck roast, beef broth, Italian seasoning, garlic powder, onion powder, salt, and black pepper. Cook on low for 8 hours or until the beef is tender.

Shred the Beef
Once the beef is done cooking, remove it from the slow cooker and shred it using two forks. Return the shredded beef to the slow cooker to soak up the juices.

Assemble the Sandwich
Slice the French rolls in half and load them with the shredded beef. Top with sautéed green peppers and giardiniera if desired.

Serve the sandwiches hot, with extra beef broth on the side for dipping.
