Dough Preparation

Mix Dry Ingredients
In a large bowl, combine the all-purpose flour and salt.

Add Olive Oil
Drizzle the olive oil into the flour mixture and mix until crumbly.

Gradually add warm water, mixing until the dough comes together.

Knead and Rest
Knead the dough on a floured surface for about 5 minutes, then cover with a cloth and let it rest for 30 minutes.

Combine Filling
Remove the filling from heat and let it cool slightly. Stir in the provolone cheese until well combined.
Assembly and Frying

Roll Out Dough
Divide the rested dough into small balls. Roll each ball into a thin circle on a floured surface.

Fill Samosas
Place a heaping tablespoon of the filling onto one side of the dough circle. Fold the other side over to create a half-moon shape and pinch the edges to seal.

Heat Oil
In a deep frying pan, heat oil over medium-high heat until hot (around 350°F or 175°C).

Fry Samosas
Carefully place the samosas in the hot oil, frying them in batches until golden brown, about 3-4 minutes on each side.

Remove the fried samosas and place them on paper towels to absorb excess oil. Serve hot.
