Dough Preparation

    Mix Dry Ingredients

    In a large bowl, combine the all-purpose flour and salt.

    Add Olive Oil

    Drizzle the olive oil into the flour mixture and mix until crumbly.

    Incorporate Water

    Gradually add warm water, mixing until the dough comes together.

    Knead and Rest

    Knead the dough on a floured surface for about 5 minutes, then cover with a cloth and let it rest for 30 minutes.

Filling Preparation

    Caramelize Onions

    Heat 2 tablespoons of olive oil in a pan over medium heat. Add the sliced onions and sauté until caramelized, about 15 minutes.

    Sauté Mushrooms

    Add the sliced cremini mushrooms and minced garlic to the caramelized onions. Season with salt and black pepper. Cook until mushrooms are soft and liquid has evaporated, about 6-8 minutes.

    Combine Filling

    Remove the filling from heat and let it cool slightly. Stir in the provolone cheese until well combined.

Assembly and Frying

    Roll Out Dough

    Divide the rested dough into small balls. Roll each ball into a thin circle on a floured surface.

    Fill Samosas

    Place a heaping tablespoon of the filling onto one side of the dough circle. Fold the other side over to create a half-moon shape and pinch the edges to seal.

    Heat Oil

    In a deep frying pan, heat oil over medium-high heat until hot (around 350°F or 175°C).

    Fry Samosas

    Carefully place the samosas in the hot oil, frying them in batches until golden brown, about 3-4 minutes on each side.

    Remove the fried samosas and place them on paper towels to absorb excess oil. Serve hot.
