    Prepare the Beef

    In a large skillet, heat olive oil over medium-high heat. Season the beef chuck roast with salt, black pepper, and Italian seasoning.

    Sear the Meat

    Add the seasoned beef chuck roast to the hot skillet and sear on all sides until nicely browned, about 3-4 minutes per side.

    Add Garlic

    Mince the garlic cloves and add them to the pan during the last minute of searing, stirring to release their aroma.

    Slow Cook the Beef

    Transfer the seared roast to a slow cooker. Pour the beef broth over the roast, ensuring it is nearly submerged.

    Add Sausage

    Place the sweet Italian sausage on top of the roast. Cover the slow cooker and cook on low for 8 hours or until the beef is fork-tender.

    Shred the Meat

    Once cooked, remove the beef and sausage from the slow cooker and shred the beef with two forks. Mix everything back into the juices in the slow cooker.

    Toast the Rolls

    While the beef is shredding, slice the hoagie rolls and toast them in a preheated oven or on a grill until golden brown.

    Assemble the Sandwiches

    Spoon a generous amount of the shredded beef and sausage mixture onto each toasted hoagie roll.

    Add Giardiniera and Cheese

    Top each sandwich with a handful of giardiniera and a slice of provolone cheese.

    Final Melt

    Optionally, place the assembled sandwiches under a broiler for 2-3 minutes to melt the provolone cheese until bubbly.
