Preparation Steps
Cook the Livers
Add the chicken livers and thyme to the skillet. Cook for about 5-7 minutes until the livers are browned outside but still slightly pink inside.
Add Brandy
Remove the skillet from heat and carefully add the brandy. Return to heat and let it cook for an additional 2 minutes to burn off the alcohol.
Blend the Mixture
Transfer the liver mixture to a food processor. Add the remaining butter (100 grams), heavy cream, salt, pepper, and lemon juice. Blend until smooth and creamy.
Chill the Mousse
Transfer the mousse to a serving dish or individual ramekins. Cover with plastic wrap and refrigerate for at least 2 hours, or until set.
Serve
