Veal Saltimbocca

Preparation

    Prepare the Veal

    Season the veal cutlets with salt and black pepper. Lay a slice of prosciutto on each cutlet and top with sage leaves. Secure with toothpicks.

    Sear the Veal

    Dredge the veal cutlets in flour, shaking off excess. Heat olive oil in a skillet over medium-high heat. Add the veal and sear for about 2-3 minutes per side until golden brown. Remove the cutlets and keep warm.

    Make the Sauce

    In the same skillet, add butter and let it melt. Pour in the white wine and scrape the bottom of the pan to deglaze. Simmer for 2-3 minutes until slightly reduced.

    Combine and Serve

    Return the veal to the skillet, spoon the sauce over, and let it cook for another minute. Serve immediately with crispy polenta, roasted parsnips, and carrots.
