Prepare the Parsnip Puree
Peel and chop the parsnips, then boil them in salted water until tender, about 15 minutes. Drain and blend with butter, heavy cream, salt, and pepper until smooth. Set aside.
Cook the Brussels Sprouts
Preheat the oven to 400°F (200°C). Halve the brussels sprouts and toss with olive oil, salt, and pepper. Spread on a baking sheet and roast for about 20 minutes until crispy and golden.
Make the Polenta
In a pot, bring 4 cups of water to a boil. Stir in the polenta and cook, stirring frequently, until thickened, about 5 minutes. Stir in parmesan cheese until melted. Spread the polenta in a greased dish to cool, then cut into squares or rounds.
Plate the Dish
On a plate, place a generous spoonful of parsnip puree, top with the seared salmon, and arrange crispy polenta and roasted brussels sprout halves around the plate.
