Pork Shank

Method

Cooking Instructions

  1. 1

    Prepare the Pork Shank

Season the pork shank with salt and black pepper. In a large skillet, heat olive oil over medium-high heat. Sear the pork shank on all sides until browned, about 5-7 minutes. Remove from skillet and set aside.

  2. 2

    Cook the Mushrooms

In the same skillet, add the minced garlic and sliced Cremini mushrooms. Sauté until the mushrooms are browned and tender, about 5 minutes.

  3. 3

    Deglaze the Pan

Pour in the Marsala wine, scraping up any browned bits from the bottom of the skillet. Allow it to simmer for 2-3 minutes to reduce slightly.

  4. 4

    Add the Broth and Thyme

Add chicken broth and fresh thyme to the skillet. Return the seared pork shank to the skillet, cover, and reduce heat to low. Let it braise for about 1.5 to 2 hours, or until the pork is tender.

  5. 5

    Finish the Sauce

Once the pork is done, remove it from the skillet. Increase the heat to medium-high and add butter to the sauce. Stir until melted and slightly thickened. Adjust seasoning with salt and pepper to taste.

  6. 6

    Serve

Slice the pork shank and serve it topped with the mushroom Marsala sauce alongside pumpkin Alfredo gnocchi.
