Roast the Beets
Preheat your oven to 400°F (200°C). Wash the candy-stripe beets thoroughly, then trim the tops and roots. Toss the beets in olive oil and sprinkle with salt. Wrap each beet individually in aluminum foil and place them on a baking sheet. Roast for about 45-60 minutes or until tender when pierced with a fork.

Prepare Radishes
Thinly slice the radishes and set them aside for garnish.

Chop Pistachios
Roughly chop the toasted pistachios and set them aside.

Assemble the Dish
Once the beets are done roasting, let them cool slightly before peeling off the skins. Cut the beets into wedges and arrange them on a serving platter. Spoon the goat cheese cream over the beets, and garnish with radish slices and chopped pistachios.
