    Prepare the Potatoes

    Boil the potatoes in salted water until tender, about 15-20 minutes. Drain and let cool slightly. Once cool, peel and cut into quarters.

    Smoke the Potatoes

    In a skillet, heat 2 tablespoons of olive oil over medium heat. Add the quartered potatoes and smoked paprika. Cook until the potatoes are golden and slightly crispy, about 5-7 minutes. Season with salt and pepper.

    Prepare the Fennel

    Trim the fennel bulb and slice it thinly. In the same skillet, add another tablespoon of olive oil and sauté the fennel until softened, about 5 minutes.

    Char the Spring Onions

    Toss the spring onions with remaining olive oil, then char them on a grill or under a broiler until they are slightly charred and tender, about 3-4 minutes.

    Cook the Salmon

    Season the wild salmon fillets with salt and pepper. In a non-stick skillet, cook the salmon over medium-high heat for about 4-5 minutes on each side, or until cooked to your liking.

    Plate the Dish

    On each plate, arrange the smoked potatoes, sautéed fennel, and charred spring onions. Place the salmon on top and squeeze fresh lemon juice over the dish.
