Prepare the Custard
In a medium saucepan over medium heat, combine heavy cream, whole milk, and granulated sugar. Stir until the sugar dissolves and the mixture is hot but not boiling.

Cook the Custard
Cook over low heat, stirring constantly until the custard thickens enough to coat the back of a spoon (about 10-12 minutes). Do not let it boil.

Prepare the Bananas
Slice the bananas and in a small pan, melt a tablespoon of brown sugar over medium heat. Add the banana slices and cook until caramelized, about 2-3 minutes.

Assemble the Crème Brûlée
In individual ramekins, layer vanilla wafers, followed by a layer of the caramelized bananas. Pour the custard mixture over the top until just covered.

Chill
Cover the ramekins with plastic wrap and refrigerate for at least 4 hours or until set.

Caramelize the Top
Before serving, sprinkle a thin layer of granulated sugar on top of each custard. Use a kitchen torch to caramelize the sugar until golden and crispy. Let it sit for a minute to harden.
