Roasted Chicken with Wild Forest Mushrooms and Sauce Albufera

Preparation and Cooking Steps

    Prepare the Chicken

    Preheat your oven to 200°C (400°F). Rub the chicken with olive oil, salt, black pepper, and minced garlic. Stuff the cavity with fresh thyme.

    Roast the Chicken

    Place the chicken in a roasting pan and roast in the preheated oven for about 1 hour or until the internal temperature reaches 75°C (165°F). Baste with pan juices occasionally.

    Sauté the Mushrooms

    While the chicken is roasting, heat butter in a skillet over medium heat. Add chopped shallots and sauté until translucent. Add the mushrooms and cook until they are soft and browned.

    Deglaze the Pan

    Pour in the white wine to deglaze the skillet, scraping up any browned bits. Let it simmer for a few minutes until the wine reduces by half.

    Prepare Sauce Albufera

    Add chicken broth and heavy cream to the mushroom mixture. In a small bowl, mix cornstarch with water to create a slurry. Stir this into the sauce to thicken. Cook for an additional 5 minutes, stirring occasionally.

    Once the chicken is done, let it rest for 10 minutes before carving. Serve the sliced chicken topped with the wild mushroom sauce Albufera.
