    Prepare the Steak

    Remove the Porterhouse steak from the refrigerator and let it sit at room temperature for about 1 hour before cooking. This ensures even cooking.

    Season the Steak

    Generously season both sides of the steak with kosher salt and freshly ground black pepper. Let it sit for another 15-30 minutes to absorb the flavors.

    Heat the Pan

    In a large cast-iron skillet or grill pan, heat olive oil over high heat until it starts to shimmer.

    Sear the Steak

    Carefully place the steak in the hot skillet and sear for about 4-5 minutes on one side. Do not move the steak during this time to get a nice crust.

    Flip and Add Flavor

    Flip the steak and add butter and rosemary to the pan. Using a spoon, baste the melted butter over the steak as it cooks for another 4-5 minutes for medium-rare.

    Check for Doneness

    Use a meat thermometer to check the internal temperature of the steak. For medium-rare, it should read 130°F (54°C).

    Rest the Steak

    Remove the steak from the pan and let it rest for at least 10 minutes before slicing. This allows the juices to redistribute.

    Slice the steak against the grain and serve with your choice of sides.
