Finely chop the Sakura Waygu beef into small cubes. Ensure you use a sharp knife for a clean cut.

Chop Additional Ingredients
Finely dice the shallot, capers, and cornichons. Set them aside in a bowl.
Mixing

Combine Ingredients
In a mixing bowl, combine the chopped beef, shallot, capers, and cornichons. Add the mustard vinaigrette and gently mix to combine all ingredients thoroughly.

Add a pinch of Maldon salt to the mixture and adjust to taste. Mix gently to incorporate the seasoning.
Plating

Using a ring mold or a small bowl, carefully press the tartare mixture into the mold to shape it nicely on the plate.

Gently crack the quail egg and place the yolk on top of the tartare.
