Preheat the Oven

Preheat your oven to 350°F (175°C).

Mix Dry Ingredients

In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until well blended.

Cream Butter and Sugar

In another bowl, cream the unsalted butter until smooth. Gradually add the granulated sugar and continue to beat until light and fluffy.

Combine Mixtures

Add the creamed butter and sugar mixture to the dry ingredients. Mix until just combined.

Add Vanilla

Stir in the vanilla extract until evenly distributed.

Adding Seasonal Ingredients

Prepare Fruit

Wash and chop the fresh seasonal fruit into bite-sized pieces.

Fold in Fruit

Gently fold the chopped fruit into the batter, along with the ground cinnamon and honey or maple syrup, until evenly mixed.

Baking and Serving

Pour Batter into Pan

Pour the batter into a greased 9x13 inch baking pan, spreading it evenly.

Bake

Bake in the preheated oven for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

Cool and Garnish

Allow to cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely. Dust with powdered sugar and garnish with mint leaves before serving.
