Shrimp Preparation

    Marinate the Shrimp

    In a bowl, combine shrimp, Cajun seasoning, and olive oil. Toss well to coat the shrimp evenly. Let marinate for at least 15 minutes.

    Grill the Shrimp

    Preheat your grill to medium-high heat. Grill the marinated shrimp for about 2-3 minutes on each side, or until they turn pink and opaque. Remove from grill and set aside.

Cajun Remoulade Preparation

    Mix the Ingredients

    In a medium bowl, combine mayonnaise, Dijon mustard, hot sauce, Cajun seasoning, lemon juice, and minced garlic. Stir until well blended. Adjust seasoning to taste.

Po Boy Assembly

    Prepare the Bread

    Slice the French baguette or hoagie rolls lengthwise without cutting all the way through. If desired, lightly toast the bread on the grill for added flavor.

    Assemble the Po Boy

    Spread a generous amount of Cajun remoulade on the inside of each bread. Layer on grilled shrimp, followed by sliced tomatoes, jalapenos, and shredded lettuce. Serve with kettle chips on the side.
