Coconut-Matcha Yogurt (make ahead)

Combine and whisk

In a small bowl, add 3 tbsp plain yogurt and 1 tbsp coconut cream. Sift or sprinkle 1/2 tsp matcha powder over the yogurt to avoid clumps.

Whisk until smooth and homogenous. If you prefer slightly sweeter yogurt, whisk in 1/2 tsp honey or maple syrup to taste. Adjust matcha if you want more vegetal intensity. Chill briefly if possible (10–15 minutes) to let flavors marry.

Reserve 1 oz of this coconut-matcha yogurt to use in one cocktail. Keep remaining yogurt refrigerated for another use (up to 2 days).

Assembly — Toki Yoda Cocktail

Prepare glass

Fill a highball or Collins glass with ice (about 1 cup). If you prefer a stirred version, use a rocks glass and large ice.

Build the cocktail

In a cocktail shaker (no dry shake required), add 2 oz Suntory Toki whisky, 1 oz coconut-matcha yogurt, 1/2 oz simple syrup, and 1/2 oz fresh lime juice. Add a few ice cubes to chill.

Shake and strain

Shake vigorously for 10–12 seconds until well chilled and slightly frothy from the yogurt. Double-strain into the prepared ice-filled glass to remove any solids and ensure a smooth texture.

Top and finish

Top with 2 oz soda water, pouring gently to preserve some effervescence. Give the drink one gentle stir (1–2 revolutions) to integrate the soda without flattening it.

Garnish

Garnish with a lime wheel or twist on the rim. Lightly dust 1/4 tsp matcha powder over the foam/yogurt layer using a small fine-mesh sieve for an aromatic finish.

Serve immediately. Sip to appreciate the whisky's bright citrus and oak notes with the creamy, lightly vegetal coconut-matcha layer and sparkling soda.
