Prepare the Strawberries
Wash the fresh strawberries thoroughly. Remove the stems and slice them into halves.

Juicing the Lemon
Squeeze the juice from fresh lemons until you have 1 oz of lemon juice. Strain out any seeds or pulp.

Mixing the Ingredients
In a cocktail shaker, combine the pisco, sliced strawberries, pineapple juice, absinthe, fresh lemon juice, and egg white.
Shaking and Serving

Dry Shake
Seal the cocktail shaker and shake vigorously without ice for about 10 seconds. This helps emulsify the egg white.

Wet Shake
Add ice to the shaker and shake again for about 15-20 seconds until well chilled.

Strain and Serve
Using a fine mesh strainer, strain the mixture into a chilled coupe glass.

Garnish
Sprinkle poppy seeds on top of the foam created by the egg white for garnish.
