Oysters
Method
Preparation
- 1
Shucking Oysters
Carefully shuck the fresh oysters, discarding the top shell and keeping the oyster in the bottom shell. Place them on a platter with rock salt to keep them stable.
- 2
Making Mignonette Sauce
In a small bowl, combine the mignonette sauce ingredients, which typically includes finely chopped shallots, red wine vinegar, and a pinch of salt. Mix well and let sit for at least 10 minutes to allow the flavors to meld.
- 3
Preparing the Garnishes
Squeeze the lemon to extract fresh juice, and set aside. Prepare the oyster crackers and horseradish for serving.
- 4
Assembling the Dish
On a serving platter, arrange the shucked oysters. Serve alongside the mignonette sauce, prepared horseradish, a small bowl of habanero tincture, lemon wedges, and oyster crackers.
