    Clean the Mussels

    Rinse the mussels under cold water, scrubbing the shells to remove any dirt. Remove the beards by pulling them off gently.

    Prepare Ingredients

    Dice the shallot, mince the garlic, and grate the ginger. Halve the cherry tomatoes and juice the lemon.

Cooking

    Cook the Bacon

    In a large pot, heat the olive oil over medium heat. Add the bacon slices and cook until crispy. Remove the bacon and let it drain on paper towels, reserving the drippings in the pot.

    Sauté Aromatics

    In the same pot with the bacon drippings, add the diced shallot, minced garlic, and grated ginger. Sauté for about 3-4 minutes until soft and fragrant.

    Blister the Tomatoes

    Add the halved cherry tomatoes to the pot and cook until they blister, about 5 minutes.

    Add the Miso and Wine

    Stir in the white miso paste until well combined, then add the white wine. Bring to a simmer.

    Cook the Mussels

    Add the cleaned mussels to the pot, cover, and cook for about 5-7 minutes until the mussels have opened. Discard any that remain closed.

    Finish the Dish

    Crumble the cooked bacon and sprinkle it over the mussels. Squeeze the lemon juice on top, and season with salt and pepper to taste.
