Method

Making Hummus

    Prepare Chickpeas

    Drain and rinse the canned chickpeas under cold water to remove excess sodium. This will help improve the flavor of your hummus.

    Blend Ingredients

    In a food processor, combine the rinsed chickpeas, tahini, garlic, lemon juice, olive oil, cumin, and salt. Blend until smooth, scraping down the sides as needed.

    Adjust Consistency

    While blending, slowly add water to achieve your desired consistency. If the hummus is too thick, add more water, one tablespoon at a time until smooth.

    Taste and Adjust

    Taste the hummus and adjust the seasoning with additional salt, lemon juice, or olive oil as desired.

Assembling Hummus

    Prepare Toppings

    Slice the Kalamata olives, crumble the feta cheese, and dice the tomatoes. Chop the fresh parsley.

    Spread the hummus onto a serving platter or bowl. Top with sliced Kalamata olives, crumbled feta cheese, diced tomatoes, and chopped parsley. Drizzle with a little extra olive oil if desired.
