Clean the Mussels
Rinse the mussels under cold running water, scrubbing the shells with a brush to remove any dirt. Remove any beards (the fibrous strands) by pulling them away from the shell.

Prepare the Ingredients
Chop the bacon into small pieces, dice the shallot, mince the garlic, and grate the ginger. Halve the cherry tomatoes and juice the lemon, reserving the lemon halves for later.

Cook the Bacon
In a large pot over medium heat, add the chopped bacon and cook until crispy, about 5 minutes. Remove the bacon and set aside, leaving the drippings in the pot.

Add Tomatoes and Miso
Add the halved cherry tomatoes and white miso paste to the pot. Stir well to combine and cook for another 2-3 minutes until the tomatoes start to blister.

Deglaze with White Wine
Pour in the white wine and scrape the bottom of the pot to release any browned bits. Bring to a simmer and let it cook for 2 minutes.

Cook the Mussels
Add the cleaned mussels to the pot and cover with a lid. Cook for about 5-7 minutes, or until the mussels have opened. Discard any mussels that remain closed.

Finish the Dish
Stir in the reserved lemon juice and the cooked bacon. Season with salt and black pepper to taste. Serve immediately with the reserved lemon halves for squeezing on top.
