Pork Chops

Prepare the Rub
In a small bowl, mix together the brown sugar, bourbon, salt, black pepper, garlic powder, and onion powder. This will form a wet rub.

Rub the Chops
Pat the pork chops dry with paper towels. Rub the mixture evenly over both sides of the pork chops. Allow them to marinate for at least 30 minutes.

Sweet Potato Puree

Boil the Sweet Potatoes
Peel and cube the sweet potatoes. Place them in a pot of salted water and bring to a boil. Cook for about 15-20 minutes or until fork-tender.

Make the Puree
Drain the sweet potatoes and return them to the pot. Add butter, salt, cinnamon, and maple syrup. Mash or blend until smooth and creamy.

Candy the Nuts
Stir in the brown sugar and vanilla extract, tossing the nuts until they are well coated. Cook for an additional 3-4 minutes until the sugar has caramelized. Remove from heat and allow to cool.
Apple Cider Onion Jam

Add Cider and Sugar
Add the apple cider vinegar, brown sugar, and salt to the onions. Simmer until the mixture thickens, about 15-20 minutes. Stir occasionally.
Side Salad

Prepare the Salad
In a large bowl, combine mixed greens, halved cherry tomatoes, and sliced cucumber.

Dress the Salad
Drizzle with olive oil and balsamic vinegar. Season with salt and pepper to taste. Toss gently to combine.
