Mash Potatoes
Drain the potatoes and return them to the pot. Add minced garlic, sour cream, butter, salt, and black pepper. Mash until smooth and creamy.

Prepare Chicken
Place the chicken breasts between two sheets of plastic wrap and pound them to about 1/2 inch thickness using a meat mallet.

Bread Chicken
Dredge each chicken breast in flour, dip in egg, and then coat with breadcrumbs, pressing gently to adhere.

Pan-Fry Chicken
Heat olive oil in a large skillet over medium heat. Add the breaded chicken breasts and cook for about 4-5 minutes on each side, until golden brown and cooked through.

Add Milk
Slowly pour in milk while whisking continuously to avoid lumps. Cook until gravy thickens, about 3-5 minutes.

Season Gravy
Season with salt and black pepper to taste. Keep warm until ready to serve.
