Method
Prepare the Crostini
- 1
Toast the Baguette
Preheat your oven to 400°F (200°C). Slice the baguette into 1/2 inch thick slices. Place the slices on a baking sheet and brush both sides lightly with olive oil. Toast in the oven for 5-7 minutes, until golden and crispy.
Make the Pesto
- 2
Blend the Pesto
In a food processor, combine the fresh basil leaves, pine nuts, garlic cloves, grated Parmesan cheese, salt, and black pepper. Pulse until the mixture is finely chopped. With the processor running, slowly drizzle in the olive oil until the pesto reaches your desired consistency.
Prepare the Burrata
- 3
Warm the Burrata
Place the burrata cheese in a small oven-safe dish. Heat in the oven for about 5 minutes, or until warmed through but not melted.
Assemble the Dish
- 4
Combine and Serve
On a serving platter, place the warmed burrata. Drizzle with the herbed pesto, and sprinkle the chopped pistachios and golden raisins on top. Drizzle with local bare honey and finish with shaved Parmesan cheese. Serve immediately with the toasted crostini.
