Preparation

  1. 1

    Chill the Glass

Begin by chilling a cocktail glass. You can do this by filling it with ice water and letting it sit while you prepare the cocktail.

  2. 2

    Mix the Ingredients

In a mixing glass filled with ice, combine 2 oz of rye whiskey, 0.5 oz of Benedictine, 1 oz of sweet vermouth, and 2 dashes of Peychaud's bitters.

  3. 3

    Stir

Stir the mixture gently for about 30 seconds until well chilled.

  4. 4

    Prepare the Glass

Empty the ice water from the chilled cocktail glass and rinse it with 0.25 oz of absinthe. Swirl it around to coat the inside and then discard the excess.

  5. 5

    Strain the Cocktail

Strain the chilled cocktail mixture from the mixing glass into the prepared absinthe-rinsed glass.

  6. 6

    Flame the Chartreuse

In a small heat-proof cup, carefully heat 0.5 oz of Chartreuse until it starts to smoke. Using a bar spoon, ignite the Chartreuse and allow the flame to burn for a few seconds.

  7. 7

    Finish the Cocktail

Carefully pour the flaming Chartreuse over the cocktail. Allow the flame to extinguish before serving.
