Prepare the Pork Belly
Preheat the oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern, careful not to cut into the meat.

In a small bowl, mix together salt, black pepper, paprika, garlic powder, and brown sugar. Rub this mixture all over the pork belly, ensuring it gets into the scored skin.

Heat olive oil in a large oven-safe skillet over medium-high heat. Once hot, place the pork belly skin-side down and sear until the skin is crispy, about 5-7 minutes.

Flip the pork belly so the skin is facing up. Add fresh thyme and transfer the skillet to the preheated oven. Roast for about 2 hours, or until the meat is tender.

Increase the oven temperature to 425°F (220°C) and roast for an additional 20-30 minutes, until the skin is crackling and crispy. Keep an eye on it to prevent burning.
