    Prepare the Dough

    In a small bowl, dissolve the sugar and yeast in warm water and let it sit for about 5-10 minutes until frothy. In a large bowl, combine the flour and add the yeast mixture. Knead until smooth and elastic. Cover and let rise for about 1 hour, or until doubled in size.

    Make the Filling

    In a mixing bowl, combine the mashed black beans, green onions, garlic, soy sauce, and cornstarch. Mix until well combined and set aside.

    Prepare the Pickled Onions

    In a small bowl, combine the sliced red onion and rice vinegar. Let it sit for at least 15 minutes to pickle.

    Prepare the Slaw

    In a large bowl, mix the shredded cabbage, grated carrot, and sesame oil. Toss until well coated.

    Assemble the Bao Buns

    Divide the dough into small pieces and roll them out into circles. Place a spoonful of the black bean mixture in the center of each circle and fold the dough over to seal. Pinch to close.

    Steam the Bao Buns

    Place the filled buns in a steamer basket lined with parchment paper. Steam for about 10-12 minutes until fluffy and cooked through.

    Heat oil in a frying pan. Once hot, fry the steamed buns until golden brown on both sides. Remove and drain on paper towels.
