    Prepare the Noodles

    Soak the vermicelli bean thread noodles in hot water for about 10-15 minutes until softened. Drain and set aside.

    Cook the Eggs

    In a large wok or skillet, heat 1 tablespoon of vegetable oil over medium heat. Add beaten eggs and scramble until fully cooked. Remove from the pan and set aside.

    Stir-Fry the Protein and Vegetables

    In the same wok, add another tablespoon of oil. Add the grilled pork belly and prawns, cooking until the prawns are pink and opaque. Add the fried tofu and gai lan, stirring until the gai lan is tender.

    Combine Ingredients

    Add the soaked noodles, scrambled eggs, curry powder, soy sauce, salt, and black pepper to the wok. Toss everything together over medium-high heat until well combined and heated through.

    Garnish and Serve

    Remove from heat and garnish with fresh cilantro and scallions. Serve hot.
