Prepare the Chicken Skin
Clean the chicken skin thoroughly and pat it dry with paper towels.

Mix the Coating
In a large bowl, combine rice flour, cornstarch, chili powder, garlic powder, onion powder, salt, black pepper, and cayenne pepper. Mix well.

Coat the Chicken Skin
Take each piece of chicken skin and coat it evenly with the flour mixture, shaking off any excess.

Heat the Oil
In a deep pan or fryer, heat vegetable oil over medium heat until it reaches 350°F (175°C).

Fry the Chicken Skin
Carefully add the coated chicken skin pieces to the hot oil in batches. Fry until golden brown and crispy, about 3-4 minutes per batch.

Drain and Serve
Use a slotted spoon to remove the chicken skin from the oil and place it on a paper towel-lined plate to drain excess oil. Serve hot and enjoy!
