Preparation Steps
Prepare the Bao Buns
In a mixing bowl, combine warm water, sugar, and yeast. Let it sit for 5-10 minutes until frothy. In another bowl, mix flour, baking powder, and salt. Add the yeast mixture to the flour and knead until smooth. Cover and let it rise for 1 hour.
Prepare the Chicken
Pound the chicken breasts to an even thickness. Dredge in flour, dip in beaten egg, and coat with panko breadcrumbs. Heat vegetable oil in a pan and fry the chicken until golden brown and cooked through, about 4-5 minutes per side. Drain on paper towels.
Steam the Bao Buns
Once the dough has risen, divide it into small pieces and shape them into buns. Place the buns on parchment paper and steam them for about 10-15 minutes until fluffy.
Assemble the Bao Buns
Once the bao buns are steamed, slice them open and add shredded cabbage, a piece of fried chicken, a drizzle of katsu sauce, spicy mayo, and pickled ginger.
