    Prepare Ingredients

    Slice the galangal, lemon grass, and shallot. Rinse and chop the culantro and cilantro. Set aside.

    Boil Broth

    In a pot, bring 4 cups of water or chicken broth to a boil.

    Add Aromatics

    Add the sliced galangal, lemon grass, shallot, and kaffir lime leaves to the boiling broth. Let it simmer for about 5 minutes to infuse the flavors.

    Add Protein and Mushrooms

    Add the choice of protein (shrimp, chicken, or tofu) and shimeji mushrooms to the pot. Cook until the protein is cooked through (about 5-7 minutes for shrimp or chicken, 3-5 minutes for tofu).

    Season the Soup

    Stir in the fish sauce, lime juice, and chili paste. Adjust seasoning to taste.

    Finish and Serve

    Remove from heat, add the culantro and cilantro. Serve hot with additional lime wedges if desired.
