Prepare the Pork Belly
Preheat your oven to 300°F (150°C). Score the skin of the pork belly in a crosshatch pattern, then rub it with salt and pepper. Place it in a roasting pan and cover with foil. Roast for 2 hours.

Make the Sauce
In a small saucepan, combine soy sauce, brown sugar, minced garlic, and sesame oil. Bring to a simmer over medium heat and cook for 5 minutes until slightly thickened.

Finish the Pork Belly
After 2 hours, remove the foil from the pork belly and increase the oven temperature to 425°F (220°C). Roast for an additional 30 minutes until the skin is crispy.

Slice the pork belly into bite-sized pieces. In a large bowl, combine the cooked noodles, pork belly, sauce, and chopped green onions. Toss to coat everything well.
