Cook the Spanish Rice
In a medium saucepan, heat 1 tablespoon of olive oil over medium heat. Add 1 cup of Spanish rice and sauté for 2-3 minutes until lightly toasted. Add 2 cups of water and salt, bring to a boil, then reduce heat to low, cover, and simmer for 20 minutes or until rice is cooked.

Prepare the Beans
In a small pot, heat 1 cup of black beans over medium heat. Season with salt and black pepper, and warm through for about 5 minutes. Stir occasionally.

Assemble the Burritos
Lay out a large flour tortilla on a clean surface. In the center of the tortilla, layer 1/4 cup of Spanish rice, 1/4 cup of black beans, 1/4 cup of shredded cheddar cheese, 2 tablespoons of pico de gallo, and 2 tablespoons of sour cream.

Roll the Burrito
Fold in the sides of the tortilla and then roll from the bottom up to enclose the filling. Repeat with remaining tortillas and filling.

Serve
Cut the burritos in half and serve with extra pico de gallo and sour cream on the side if desired.
