Directions

1. Prepare the Rice

Cook the Spanish rice according to package instructions.

2. Warm the Tortillas

Heat the large flour tortillas on a skillet over medium heat for about 30 seconds on each side until warm and pliable.

3. Assemble the Burrito

On each tortilla, layer 1/2 cup of Spanish rice, 1/4 cup of black beans, 1/4 cup of pico de gallo, 1/4 cup of black bean & corn mix, 1/4 cup of sliced radish, 1/4 cup of shredded red cabbage, and 1/4 cup of chopped cilantro.

4. Add Sauce

Drizzle with 1/4 cup of chipotle crema and 1/4 cup of salsa verde.

5. Wrap the Burrito

Fold in the sides of the tortilla and roll it up tightly from the bottom to the top.

6. Serve

Cut the burrito in half and serve immediately with additional salsa verde on the side.
