Method

Prepare the Duck Breast

    Seasoning and Smoking

    Score the skin of the duck breasts in a crisscross pattern. Season with salt and pepper. Place wood chips in a smoker and heat. Smoke the duck breasts for about 1 hour or until cooked to your liking. Let rest before slicing.

Make Savory Sweet Potato Cake

    Cooking the Cake

    Boil sweet potatoes until soft, drain, and mash. In a bowl, combine mashed sweet potatoes, flour, eggs, melted butter, baking powder, salt, and herbs. Mix until smooth. Pour into a greased cake pan and bake at 350°F (175°C) for 25-30 minutes or until golden.

Prepare Onion and Wine Marmalade

    Cooking the Marmalade

    In a saucepan, sauté onions until caramelized. Add red wine, sugar, vinegar, and salt. Simmer until thickened, about 30 minutes. Let cool.

Prepare Figs and Blood Orange Foam

    Making the Foam

    Soak gelatin sheets in cold water. In a saucepan, combine blood orange juice and sugar, and heat until dissolved. Remove from heat, add gelatin, and stir until dissolved. Allow to cool and then whip until foamy.
